Jalapenos are very versatile peppers and are typically picked green, although they can be left to ripen red at which stage they will be considerably hotter. As the name implies, green fruits are ready for picking in as little as 65 days after transplant. We love featuring jalapenos in the traditional pickled Mexican condiment escabeche.
