Description:
A South American superfood that is also highly ornamental. This plant grows to 6 feet tall and flowers in shades of green, orange, pink, yellow, red and white. While the plants are young, the nutrient dense leaves can be cooked and eaten like spinach. Quinoa grains can be shaken from the mature flower heads in late fall and roasted, cooked, or ground into a nutritious flour. High in protein and deliciously nutty in flavor. Once established, quinoa is fairly drought tolerant, though irrigation does improve yield.
