Latin Name: Triticum durum
Description:
Durum has been grown in Central Europe and the near East since 7000 BC. This species is the hardest of all wheat; high is protein content and low gluten. Great for pasta making.
Story of this Seed:
Jerusalem Durum was collected in Palestine peasant field of Wadi Fukin, near Bethlehem and we purchased from Eli Rogosa, Heritage Grain Conservancy; which was procured from the USDA gene bank.
Rick started out growing this wheat for his own family along with several other varieties, and after a few years, he saw the potential to expand his harvest.
Knowing his friends Danny & Sandy had farm land, he asked if they would consider growing on their unfarmed pasture land. 12+ years later
with Danny's farming experience, Rick's help and motivation and Sandy's knowledge in marketing via computer and baking expertise we have expanded to selling certified organic flour to our community and seeds to an organic flour mill.
